My favorite summertime meal is corn on the cob, sliced garden tomatoes, cold leftover Publix fried chicken, and watermelon for dessert.
Mine is potato salad and baked chicken followed by watermelon or ice cream.

I just love a bog old salad in the summertime, made with as much local produce as possible.
We enjoy bacon & tomato sandwiches, cucumbers& onions marinated in vinegar, baked beans, & potato salad.

Anything my husband can cook on the grill…lol! Beats heating up the house tuning the oven on. I love making some kind of pasta salad to go with hamburgers (turkey burgers at our house), hot dogs, or cheddar brats, baked beans & chips (usually sunchips). We also like to do hoagie sandwiches with a variety deli meat & a side salad. My husband also does a lovely macaroni salad that’s his mom’s recipe, it’s our main dish because it so filling 🙂 I think anything you don’t have to cook much of is a good choice! There’s so much fresh produce this time of year that you can do all sorts of salads or sandwiches.

I love salads with grilled chicken, walnuts, craisins and raspberry dressing. For dinner grilled bbq chicken, pineapple, rice and fresh vegetables.
I eat less hot food in the summer, sandwiches and salads are on the menu for me most nights
